1 block of firm/extra firm tofu
Drain then press for ~30 mins to get moisture out
While that's happening mix
4 tbsp soy sauce
3 tbsp rice vinegar
1 tbsp mirin
1 tsp sesame oil
1 tbsp minced garlic, I just use it out of a jar
1 tbsp grated ginger or ginger paste
2-3 tbsp canola or vegetable oil
Once the tofu is pressed cut into cubes or steaks or whatever, toss em in a tupperware with the marinade and leave overnight
Once marinated toss cubes with a few spoons of cornstarch and pan fry until crispy
