Upon further reading, your issue come from trying to cheat the armor by try to bypass it in the most asinine way possible - use a mod character with global ability to run away and spam - and thus never break it.
There had been many attempts at showing how the armor can be take down by conventional means, video footages included, but none of the words or visuals had stick - as if you lack the ability to either read or form cohesive thoughts. Thus keep insist on wailing about "infinite armor".
As for the "matchup dependant" complain? All vanilla character clear:

So either it's a skill issue or mod characters being incompetent.

Here is Big Sword "infinite armor" down in 2 seconds real time on a vanilla. Just so you know you cosign with an idiot.

Apparently, "infinite armor" may stray from a knee jerk reaction on unable to get through armor on very 1st hit, or refuse to interact then running away and throw projectile, and the urge to just cry on the steampage instead of investigate, not my issue.
You can't "adapt" to this because you complain before you think.
It isn't like an dark souls fight or something that you can just adapt to, it is just an RUN experience. You run, or you die, and this is not fun; so this bossfight R trash.
Point : If she had, really, REALLY SLOW movements and high frames animations. Yeah, this could be a fair cool fight, but nah, just unfair as hell and doesn't worth
There are instruction on how to enable AI and train this matchup in description.
Yeah, pretty lame. This boss is the real lame, he has inf armor so . . . It's a ♥♥♥♥♥♥ fight even if you try to fight normally. Doesn't worth the time lost.
you should honestly tweak the shield of the Big Sword, it should be a bit more easier to break it

- Big Sword is NOT immune to grab, grabbing drop her poise by a large amount and make you completely invincible for that turn, you can grab normally when poise is down.
This is no the same as Goon AI, and disabling P2 input is what make Big Sword give up attacking entirely.
get it right and she'll lose a MASSIVE chunk of armor. it also seems the high and low chip dmg reduction are active in this as well.
