Shame on Bethesda for doing the absolute bare minimum job of getting Skyrim over to VR, then having the gall to release this game for 60 dollars. They've done a horrible job of utilizing the full potential of VR controls. It's very clunky and frustrating to use. Games like H3VR, Blade&Sorcery, and VOTLVR have done an excellent job of making the VR controls feel natural and appropriate. Controlling this sh*t feels like playing Dota on a Guitar Hero controller. The studios that released those games are not even close to the size and manpower that Bethesda can muster, yet they do it so much better. It's completely counter intuitive and more akin to playing on console. The most frustrating thing is having to control all but one of the menus with the VR analog sticks, instead of the typical point and click option that, oh I don't know, EVERY OTHER DAMN VR GAME HAS. The Map menu HAS THESE POINT AND CLICK FEATURES. They could of done it, but didn't. Typical Bethesda effort. What a surprise. If you are not comfortable with modding, don't bother. It's horrid.

HOWEVER:
If you ARE comfortable with modding Skyrim (come on now it's not that hard), you're gonna have a great time. In my thousands of hours of Oldrim, I've never once stopped to listen to the characters talk, stopped to admire the scenery, or just sat down on a bench in Whiterun to enjoy the music and people. It's the most immersed I've ever been in Skyrim. Skyrim VR is the "Special Edition" version of Skyrim, and MOST mods will work as long as they are from the SE Nexus. Skyrim VR specifically doesn't have a ton of dedicated mods, but there's a great community of people working to make popular SE mods VR compatible.
These mods make the game incredibly fun, and the bare minimum mods you'll need to make this game playable in my opinion:
SkyUI, VR friendly ENB, VRIK to give you gesture activated"hotkeys" holsters and a physical body, Spellsiphon, Ordinator, Onyx VR Weathers with darker nights/interiors options, Enhanced Lights and FX, USEEPatch, SMIM, NoStaggerMod, No Collision Between Actors SSE Edition to work around the stupid dragon collision boxes, and Skyrim VR Config Tool to set bAllowVRCheats=1 to stop your head from pushing you away from the massive collision boxes among other things.
