What can I say about Stardew Valley that hasn't already been said?
Categorically:

~Gameplay~:
The game starts with a very humble premise; start a farm and live peacefully away from the hustle and bustle of city life. This descends into a myriad of objectives involving appeasing the woodland spirits, reaching the bottom of the cursed mines, making it rich and inevitably; having fun.
These follow a very interesting time based system. Each day in-game lasts about 17 minutes which is time that is spent tilling soil, planting seeds, harvesting crops, petting animals, making mayonnaise, shopping, exploring and pretty much anything you could want to do in Pelican Town.
There is no end objective and the game ends after 3 years have passed in game (or about 12 months or 336 days) but it does give you a new-game+ option for those who are too compelled with their farm to start a new one to which the game is infinite, just letting the player continue forever.
The player can do almost anything in Stardew Valley as the game has so many mechanics it's be almost impossible to experience them all in the games three year soft limit. You can be anything from a hard working, no fuss farmer, to a brave explorer and slayer of monsters for the adventurers guild or even a world famous fisherman consistently reeling in the big ones for a captive audience.
One thing is consistent between each play style though and that's the sheer amount of fun to be had with each experience.
(Also, becoming a rancher and owning a legion of Chickens, Ducks, Rabbits and Pigs is the most rewarding thing in my opinion.)

~Graphics~:
Eric Barone did an absolutely amazing job learning how to draw pixel graphics from scratch and ran with it all the way through the game to a beautiful effect, reminiscent of Harvest Moon on the SNES. Each tree and plant and character and animal all feel lovingly and logically hand-crafted. The colour palette swaps every season contrast excellently and are a perfect reflection of childlike wonder and each vibrant backdrop is a canvas for the player to make their journey.
One minor criticism would be the vanilla art for the pigs. They look a tad too grumpy and lumpy for some players but that's fine according to Eric, the amount of downloads for the "Better Pigs" Nexus mod has been officially endorsed by Barone himself stating that maybe his do look a tad unsightly.
At night, the game changes tonality all together, everything around the player becoming shades away from pitch-blackness, turning the familiar and welcoming into a barren landscape as the player rushes home before the clock strikes 2am. This is a brilliant contrast and really provides a great sense of urgency without forcing the players hand.
Everything in Pelican Town is logically located and the Player Farm is big enough that nothing is inaccessible from more than a short walk across town.

~Characters~:

There's no wasted characters in Stardew Valley, each bringing something unique to the game and a tiny bit of charming inconvenience each and every time I try and buy a chicken from Marnie and she's OUT.
