All you have to do is place the x360ce EXE in this folder: Steam\steamapps\common\Snake Pass\SnakeSimulator\Binaries\Win64. Then, run the EXE and it should be fairly self explanatory from there if you're familiar with x360ce. If you have any specific questions, ask them in the comments!

I guess if you suck too much to beat this easy game the way it's meant to be played, you can try it with a weird controller.
