Learn their limits and exploit that, find out how can YOU fight them, this is one of those rare instances on a game like this where only the person playing can find a way to defeat the obstacle at hand by aproaching in a unique way.
Its not the plane, its the pilot
Second stage is tricky, they have two F35 with forward swept wings that WILL DO the Top Gun 2 thing when you least expect and fire missiles up your arse in a matter of a second they are as agile as you are, but not as fast, the others are normal F35's of different variants and are exceptionaly aggressive, the strategy of barrel-rolling their missiles will work on the second stage just as good, but they fire so many, one or two of them is bound to hit you, isolating them and taking them one by one is possible but insanely tricky to perform, since they have pretty much the same speed and are just as agressive, the hardest way and the most efficient is to play them around into chasing you, they will cluster and you try to pull a quickie on them, outmanouver the normal ones and eat their ass with missiles, that worked for me, managed to splash 4 out of the 7 when i could pull this out.
Remember: turn -> Breake(while turning) -> Accelerate(at the end of your turn)
You can actually chain that to perform a cool and usable spin around the enemy fighter, hold the machinegun for some spray and pray if you feel lucky enough to score some lucky hits, the GSh-30-1 is really powerfull but slow, recquiring eiter spam or accuracy.
My initial strategy works on the first stage and might as well in the second if done correctly, first i need to estabilish that if you open the area map, you get the exact location of of the enemy fighters, use this in order to locate them. pick one and charge, once you hear missile alert do a barrel roll(not the starfox one) and ativate your PSM Thing for a while, you may need to dodge some missiles here and there to get them in a nice spot to you, your fighter is far more agile and fast than theirs, so you can play them around to some perfect shots, just disable the PSM thing when you're in a confortable position to fire cuz if you manouver wrong or brake to stabilize that can throw your missiles off cource a bit and result in a miss. Try to remain at 100% integrity, otherwise, you'd better restart.
To my experience, fighting this mission with the current plane is absolute hell, the dificulty is beyond "Very Hard", not only due to the enemy composition, but also due to the fighter you're flying, it spins way too fast, and is far too agile for its own sake.
i'm gonna drop some tips here for this specific mission, ok, it might work, it might not.
