I'll summarise the points for you from the video:
1. Crustaceans have fibrous muscle, while land insects have hydraulics filled with fluid; a crustacean of the same mass will have more accessible protein.
Crustaceans also have more fat, which is necessary for a balanced diet and protein absorption.
And crustaceans don't need to be deep fried to access the majority of its protein; (the majority of a land insects "protein" is the chitinous shell) and the meat can easily be accessed by opening them after cooking.
2. Land arthropods have far more diseases than water dwelling crustaceans; and are harder to prepare as a result.
A cockroach alone can host pretty much most illness, even parasites, leprosy, etc.
And while both are natures cleaners; crustaceans tend to be far more clean, albeit still need adequate preparation.
3. Land bugs, due to their anatomy; lack any real flavour unless prepared with an excessive amount of spices, salts and unhealthy saturated oils.
4. While both fall under arthropods; both have exceedingly different internal anatomy and body plans; crustaceans often having more legs; and gills instead of the spiracles and tubes land insects have.
Overall; in summary, land arthropods are generally unclean, and need to be processed a lot more to be edible; all for less overall healthy protein and fat yields; when compared to crustaceans.
