The way the game works is delivery jobs are generated based on need. If the trucks arent doing anything with the wood, there are no valid destinations for it.
If you start construction of a building that requires wood (e.g. the trading dock), the construction site will request the wood and trucks will drop it off there.
Or if you have an assembly plant with the construction parts recipe enabled, the assembly plant will request wood to be delivered to it (they are an ingredient for construction parts).
Finally, if you have a unit storage building set to store wood, and it is not full and allows imports - trucks with wood as their cargo will deliver it there.

I would recommend tweaking the difficulty settings initially to give you full refunds on deconstruction. Secondly I'd get into the habit of maintaining a surplus of Unity generation so you can freely use it for quick construction/deconstruction.
The reasoning here is I think you're going to learn a lot by doing. A lot of the time folks will feel the urge to restart and do things "proper". You are going to be "redoing things proper" well into 1000 years game time as you unlock new tech and shift production around, though.
So if you set yourself up with a game state that minimises the cost of experimenting and rebuilding, you'll have an easier time not just learning from mistakes, but correcting them as you go and seeing your city and factory grow and evolve with you. With full refunds and instant build, you can rapidly iterate on an idea until it's "perfect" for now.
It's okay to use some of the difficulty options like refunding 100% of the construction cost on demolition and making world mines infinite - both those will give you a bit of a cushion if you realise you do want to redesign your whole base without starting over. Of course restarting can be fun too. Just don't get intimidated by having to rebuild whole sections of your setup, that's practically inevitable.
The end-game state generally winds up with you either crashing asteroids with all the resources you need so you can mine forever, and/or setting up contracts that give you endless supplies of raw resources so you don't need to worry about running out of anything.
But the journey to get there can be precarious!
I have one of the same issues as Overlord in that I'm running out of ground water, so your tips for him will help me too. I am going to start a new game tho - I find that I get so far and then realise I could have done basically all of it much more efficiently from the beginning.
For oil you probably do want to have your diesel production close to the cargo ship drop off. A long pipeline isn't the worst option, because you're unlikely to be using diesel constantly. Just have a large storage tank before it goes into your diesel processing. Once you're set up to be using the cargo ship and oil rig that should solve your diesel issues for a long while.
When it comes to water, you definitely want to avoid over-relying on a single groundwater source. Again, generally a long pipeline will be better than sending trucks halfway across the island. Groundwater sources replenish with every rain so you can connect pipelines between each one and have water storage tanks, then pause a groundwater well when its source is getting low, letting the others work harder. You can supplement with rainwater harvesting if you have the space, but I generally juggle groundwater sources until I'm off coal power and I can start using desalinators safely.
