How to uninstall the game

Open your steam library. Here you can see all the games that you own. Right click on the game "Slay The Spire". A menu pops up and you should navigate to "manage". From here you click "uninstall". And there you have it.

To think I had to turn to the internet for answers that should be readily apparent with basic gameplay functionality - that's just bad game design

....and then reinstall the game two days later because StS is awesome and more addictive than 99% of other games.

I'm really glad someone finally wrote up a guide on this. I've spent the last 100 hours in game, desperately trying to figure this out. Maybe now there's hope for me yet...
