I am also personally no fan of mods that make things easier but since you told me so, I was looking for mods, added one for more sound effects in the wildernes and dungeons and more animals in the cities. And my horse is a little bit faster now. xD
But I would never ever install a mod that gives my horse armor for example cuz it simply makes things too easy for me. I would like to find mods that make the game more realistic and challenging. Let me know if you got a nice mod for me :D

sounds retarded.. XD you should try out real mods tho =D I played with loads of mods and it made the game 10 times better,harder and interesting =D
