You need to have someone learn them, and it'll unlock the formation tab and some default components.
They went for a "realistic" approach in this game on this apparently. From what I know there is 2 causes of death that are outside of the player's control => when sects fight each other, or old age (NPC traits are somewhat random, and some of the traits reduce life expectancy... so they can die during first or second year).
But, yeah, it'd be much better if critical NPC had some kind of protection, or if their secret passed to another disciple.
