Definition for females/males can be controlled by two separate mods available on the steam workshop. You can also control female muscle definition by downloading an older female nude mod off the nexus that just doesn't support female muscle definition.
As for muscle bulk, you have to work around it in game.
As far as I know three things bulk them out. Strength Stat, Armour Smithing, & Weapon Smithing.
So to break the caps you must use the trainer in this mod or another similar to it, or you won't get get past 100. So simply don't pass 100 on strength, a. smithing or w. smithing by using trainer constructibles. This way you shouldn't get freaky roid rage characters (In terms of muscle bulk.)
Take everything I say with a grain of salt because I haven't played this until recently for several years, and It's not a game I've ever created mods for myself.
