The equipment tab could benefit from noting humanity affecting dropchances of items, too.
Catacombs: Just before the Gravelord boss gate is a spot with infinitely respawning skeleton babies. Equip the Ring of Evil Eye and Gold Serpent. Try using a weapon that attacks fast. Sword/Curved Swords work well due to their move-set (1-hand for sword, 2-hand with curved). When you kill these skeletons, it's a good idea to stay close to the corpse because 90% of the time, the humanity will disapear along with the corpse. Each skeleton gives around 120 souls, so extended Humanity farms can rack up a lot of souls.
Oolacile: All Humanity Ghosts can drop Humanity, however, the problem is simply getting there. You have to beat the first 2 bosses and cross most of the DLC to get to the farming sweetspot. Great Scythe 1-hand R2 works wonders here.
Depths: All Rats have a small chance to drop Humanities. Slimes can drop Large/Green Titanite Shards. A low-power Combustion pyromancy is strong enough to 1-shot Slimes, making this spot a very good early grind spot. Green Titanite can be fed to Frampt for regular Titanite Shards. Frog-things further below can give Eye of Death used to level up Gravelord covenant. (In the Remastered, the drop rate for Eyes were increased).
