How to prepare and serve RAW MACKEREL! (고등어회)

In commemoration of this beautiful work of art brought to you by Korean cinema, I shall show you how to prepare and serve raw mackerel. A very delicious dish that will tickle your palate!

Step 1: Buying the fish
This step is the easiest one to do, as there are many local Asian Fish Markets or High-end Supermarkets that sell sushi-grade mackerel. Be sure to ask and let the vendor know you are looking for freshest mackerel they have available. Preferably, you should purchase mackerel that was recently obtained, so the quality is at its best.

Step 2: Preparation
Once you get home after buying the fresh mackerel, you have to prepare it. Preparing the mackerel is not a difficult process. You just need to keep CLEANLINESS IN MIND!!

PREPARATION REQUIREMENTS

  1. A sharp knife
  2. A clean cutting board
  3. Clean hands (Wash your hands before preparing the fish)

Remember to wash your hands carefully before starting!

You'll need a sharp knife to cut the mackerel up into fine little pieces. Trim it into a one to two-inch wide by a half to one-inch high fillet, or simply use it in whatever shape it’s already in. Cut the fish against the grain into ¼-inch thick slices.

A clean cutting board is necessary so the mackerel does not get contaminated.

Step 3: SERVE!



The final step! See? Now that was not too hard, was it?

Arrange a few pieces on a plate and serve it with chopsticks and soy sauce for dipping. Eat it with rice, or whatever! Do what you want!





In Korea, mackerel is mainly grilled or stewed. These are great, but this method to eat this fresh fish is, really, really good!
