Sub Rosa Alpha 27 is currently Windows-only, so you can open your Sub Rosa config.txt by pressing Win+R and entering

The lines we will be changing in this guide are found at the bottom of the file:

The playergender variable takes two values: 0 and 1, corresponding to Female and Male, no secrets to be found here.

The playerhead variable takes five values in-game: 0 to 4 corresponding to Heads 1 to 5.

However, by changing it in the config.txt, any value from 6 to 15 will make your head vanish entirely, leaving only your hair.
(you can still get hit in the "head" with bullets)

The playerskincolor variable takes five values in-game: 0 to 5 corresponding to Skin 1 to 6.

There are two extra skin colours we can access by setting the value to either 6 or 7:

6 is clownface with pink lipstick
7 is clownface with brown lipstick

The playerhaircolor variable takes 12 values in-game: 0 to 11 corresponding to Hair Color 1 to 12.

However, we can still assign values from 12 to 15:

12 gives pure red hair
13-15 gives pure white hair

The playerhairstyle variable takes five values in-game: 0 to 8 corresponding to Hair 1 to 9.

Giving values from 9 to 15 removes your hair entirely.

The playereyecolor variable has valid eye colours for all numbers 0 -> 7 in the config, so no secret eye colours are available.

To apply these values, make sure Sub Rosa is closed, then save your changes to config.txt
Then, rejoin a server twice and everyone will see your new look.
