but now after updating, i cant seem to find any relevant settings that make bots give healing items priority to those with the healing trinkets equipped, and my salty/bardin bots keep snagging the healing items from kruber, and krubers picking up tomes when he shouldnt be
No, it wont.
You can play private (solo, should you choose to), but not offline.
As long as you are hosting the bots will be competent.

You do not have to delete them. You can simply turn them off in the mod-options.
But you wish to, go to your vermintide folder. Go into mods, than patch-folder and delete the mods you dont wanna use.
