Skyrim SE seems more stable than the original. Still has a few bugs and glithes.

If you enjoy the vanilla experience, I recommend having some graphical mods.

If you want more freedom, without the burden of the main quest, the Alternate Start(Another Life) mod is a must have. I found this to be the most enjoyable to replay this game.
