Point 2: The minions aren't entirely immortal
While the minions are fairly resistant to nearly about every form of physical attack, they really aren't too resistant to Biological and chemical attacks. While the fart gun technology and jam from the second movie are some minor examples of this, one major example to prove their weakness to biological and chemical agents is the PX-41 mutagen. When exposed, all living organisms including the minions are immediately transformed into purple zombie like monsters. Given that Germany had used large amounts of gas weapons in the first World War, its not impossible to assume that there were extra stockpiles at the start of World War 2 with the minions siding with Nazi Germany using chemical weapons against Minions on the Soviet side of the eastern front.

Point 1: There were tens to hundreds of millions of minions in the world.
Throughout the minions movies we can see them throughout human society with barely anyone batting an eye. Throughout their adventures whether it be from a TV studio, the villain convention in the 60s, joining the French military or just out in the general public no one really cares about their appearance. In our world if you say a yellow cyclops tic-tac running around Times Square people would definitely be batting an eye. They even managed to get a ride from a family to the villain convention. While there may only be a few hundred minions left in the world, they were likely around for enough time for society to not care about them.

Since the minions were a species which evolved during the time of the dinosaurs, its not impossible to assume there were millions of them around the globe. However, when the world wars started both Stalin and Hitler attracted minions to both sides of the eastern front. The reason why the eastern front was so bloody was because of the amount of minions killing each other to determine which side is more evil and worth their service. This minion civil war killed nearly every minion making them almost entirely extinct accept for the minions in the ice cave. Some evidence in the movies to support that there were actually millions of minions in the world is how little people react to them in public and treat them like regular people.
