Ingredients:
1 lb chicken (breast or thighs)
4 cups chicken broth
2 cups water
1 onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
Salt and pepper to taste
Optional: herbs (thyme, parsley)
Instructions:
In a large pot, combine chicken, broth, water, onion, carrots, celery, and garlic. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, until chicken is cooked.
Remove chicken, shred it, then return to the pot.
Season with salt, pepper, and herbs. Simmer for another 5-10 minutes.
Serve hot, garnished with parsley if desired.
