Early Access Review
My steam does not accurately reflect the number of hours I have spent in this game (or many of my other games) for reasons surpassing understanding. I would wager I have something like 700-1000 hours in 7 Days to Die from playing, modding, hosting, testing, leaving it on etc.

PROS:
Zombies everywhere, if you like that sort of thing.
Crafting and upgrading system is pretty good.
Skill system is pretty cool, or at least I like it a lot.
Voxel terrain that isn't blocky but still made up of cubes/diamonds technically.
Combat is simple, no melee combos, no bullet drop etc(PVE pro, imo)
Graphics are pretty good for a voxel game that allows you to customize your appearance, imo.
Landscapes are gorgeous, at times to the point of distraction. When they switched to Unity 5 I spent about an hour just running around looking at the new tree designs.
Farming, hunting, cooking etc.
Fallout 4 style power system (wire dragging etc)
Fully crafted default game map.
Random generation for unique maps.

CONS:
Zombies everywhere, if you don't like that sort of thing.
Skill system is updated a lot and they do not support reverse compatibility with updates so you might lose progress any time the game updates and it updates a large update every 3-6 months with smaller updates inbetween.
UI is a little clunky and esoteric at first.
Caves underneath buildings can cause instability in a non-consistent manner, be careful where you dig and where you build.
Occasionally the random generation will bug out in one way or another, they work on this constantly.
Graphics are not so great other than 'for a voxel game'.
Combat is simple, no melee combos, no bullet drop etc (PVP con, imo)
Some people continue to have performance issues, it's run like butter on my machine whether I was hosting a dedicated server on the same machine I was playing on or not since about alpha 10 or 11. Your mileage may vary.

THAT SAID:
I love this game, I avidly support its development, it's one of the best early access titles I've ever played and I don't say that comparing it to things like DF-9 and other abandonware. My friends and I play it regularly (since about A14 or so) and everyone finds something different to enjoy., especially now that the skill system incentivizes specialization. I make the weapons and the tools and do the bulk of the solo exploration, one friend makes armor and science stuff, another does the bulk of our mining, our wives/girlfriends do all sorts of building and goofy random stuff because they haven't been playing very long or are afraid of the zombies. It's a hoot.

If you like survival games, voxel games and zombie flavoring on top of those things, you'll love 7 days.
