Papriku i patlidžane oguliti i samljeti u mašini za meso (predlažemo: mljeti na najsitnije rupice). Pomiješati paprike i patlidžane, dodati ulje, sol po ukusu i početi s kuhanjem. Miješati neprestano kako ne bi zagorio.
Kada ajvar prokuha dodati kokošju kocku, jušnu žlicu senfa i octa. Miješati bez prestanka! Tko volji ljuto sada je prilika dodavanje feferona (sjeckane ili mljevene). Dodati začine prema ukusu.
Kuhati 60 – 90 minuta uz neprestano miješanje dok se ne zgusne.
Usuti u teglice, ali ne do vrha, pa sve staviti u pećnicu na 70 stupnjeva dok se ne uhvati korica (60 – 90 min). Ostaviti teglice u zatvorenoj pećnici do jutra (12 sati) da se ohlade.
Preko ajvara sipati malo ulja, te sve dobro zatvoriti.
