Ingredients
4 cup soaked bamboo shoots
1 cup minced tofu
1 shallot, minced
1 tablespoon sesame oil
2 tablespoons soy sauce
1 teaspoon brown sugar
1 pinch ginger
1 tablespoon minced garlic
5 or more feathers
1 cup cold water
Method
1. soak bamboo shoots in water for 2 hours or overnight.
2. Finely dice the tofu and shallot.
3. Sauté the garlic and ginger.
4. Finely dice the garlic and ginger.
5. Drain the bamboo shoots and chop them into half.
6. Mix all the ingredients with the tofu and shallot.
7. Add 2 or 3 of the feathers.
8. Bring the stock to boil and cook for 5 minutes.
9. Remove the feathers.
10. Season with salt and add 2 or 3 more feathers.
11. Boil gently for 3 minutes and serve hot.
