-Preheat oven to 275°F
-In a bowl, mix together to create a dry rub:
1/2 cup brown sugar
1 tablespoon garlic powder
1 teaspoon salt
1 tablespoon chili powder
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
- Pat dry the ribs (about 6lb of meat) and cut off the membrane on the back (not fully necessary)
-Spread the dry rub all over the ribs, really get all up in there
-Wrap in tin foil, make sure meat side is UP, place on baking sheet (make sure it has sides!)
-Bake for 2.5-3 hours (If baby back, do 2)
-Open foil, drain liquid from ribs. Add barbecue sauce (I like Stubb's Sweet Heat)
-Set broiler on, put back in for a few minutes (Please do not walk away, watch them at all times. 2-3 minutes is usually enough)
-Remove, let rest for 5-10 minutes.
