Stardew Valley is a very addictive farming (and more) simulator. It has quite the content and will keep you busy for a long time, while remaining relatively relaxing at the same time. Tasks are multilple: farming, mining foraging, fishing, networking, and even a few quests.
But beware, it also isn't so easy all together and you will have to arm yourself with some patience at the beginning. You start with almost nothing, just the farm and some land you've inherited, a few gold, and that's it. From there, you will have, either by trial and error or by looking up some guides, to plan a schedule and search for the best way to make profit.
And once your farm is up and running and money is flowing? It isn't especially over, keeping it running is still quite fun and addictive.
