TL;DR
Mutiplayer > Singleplayer, great game, lots of fun, infinite replayability, graphics are good and it's well optimized. Music and sound effects are nice, active community, cheaters/modders can be a real trip, often fun and other times troublesome (regardless, you're not at their mercy), grind is a wh*re, tons of f*ckery with your buddies.

Impression
Gameplay is solid and smooth, graphics are good (I love me some godrays), the game in general is well optimized, animations are fluid, music is awesome (specially with the in-game radio), sound effects are also great, everything is great regarding those aspects; Like any other GTA title you can expect a lot of messing around.

Customization
Nice variety of everything: cars, planes, helicopters, boats, guns, melee weapons, explosives, clothing, NPCs, radio musics, buildings you can own like houses or businesses, tasks, jobs, missions, heists, even random activities such as racing and "minigames", etc; Most guns and vehicles allows for quite a selection of modifications, too.

Singleplayer
Story is alright, but not spectacular, however, the main cast of characters, from their personalities to their voice acting makes up for anything the main plot may have left to be desired.

Multiplayer
Now this is where the game truly shines, it's safe to assume most people who bought GTA 5, did so mainly because of the multiplayer, myself included, and rightfully so!
Variety of things to do and buy is vastly improved in multiplayer, leading to an even better gaming experience even if you're trying to enjoy the game by yourself, away from others, but personally, the real fun is with friends, the f*ckery already present in the game can be taken to a whole new level, it's the main reason I praise this game for what it is.
Thanks to that I'd say this title has infinite replayability, you can always find something enjoyable to do.

Active community
It's been about 4 years since GTA 5 was released on Steam and ever since, it's always been in the top 10 "currently playing" on Steam stats, even now.
There's also a lot of amazing Steam guides helping you with all sorts of things, from basics to advanced; I particularly recommend those made by https://steamproxy.com/id/_provo_

Graphics and performance
I love the graphics in this game and how well optimized they are, as of now (moment I'm writting this review, early 2019) my setup is mid-range at best (FX-6300, GTX 660 Ti, 8gb RAM) so with any intensive game I have to tweak options around, lowering or increasing things depending on what I see as "priority".
Taking that in consideration I'd say this game is really beautiful and the graphics so far are aging well.
Downside: loading times are absolute trash

Music and sound
Music is great, specially with the in-game radio system, which features many stations to choose from, high variety of music genre and the radio broadcasts are pretty funny to listen to (until you've heard it 69 times at least); Sound FX is also great, especially explosions and how spatial noises are.

Grind
The issue starts here... Getting money to buy stuff, when it comes to multiplayer, isn't difficult at all, however, it's a tedious and long process.
Variety in how to go about it is still present, but it feels like it's very unrewarding... Or sh*t is just too expensive... Or both.
It starts off as fun, but as time passes by you realize how boring it is to spam jobs, missions or heists, specially the latter since it's something you can't do alone and others' failures can cost your progress as well, which leads to toxicity and frustration, BUT, hear me out, there's plenty of ways to get in-game money, even solo, better yet if you got buddies helping you out instead of complete strangers, that said I still don't like the general grind in this game, this would be the main drawback imo, more on that later.

Cheating/modding
Lastly the 2nd drawback which so many people complain about...
This is a double edge sword in my eyes; I don't cheat/mod, I don't encourage others of doing so nor do I shun them just because they're doing it (I shun people for being assh*les, regardless if they're cheating/modding or not lol).
They can be nasty creatures bent on ruining everyone's experience, but they can also be people who like me, just wants to have a good time, remember what I mentioned before, the "f*ckery"? That's the biggest plus in any GTA title, imo.
However, if no matter what you don't want any interactions with cheaters, chill, you can change your online session and even make them private to invite friends, and so...

A little something...
I mentioned "more on that later", here it is, this is more of my opinion on what I believe to be GTA's main issue.
Before I start: I'm NOT trying to protect, justify or encourage modding, but likewise I don't see them as the bane of the game like so many other reviews made it seem so here we go.
Shark cards (the P2W way of getting in-game currency) are very overpriced and inconvenient, no one wants to use irl money to get in-game goods you can get without spending a cent, so we all just grind, and like mentioned before it's a painful process...
So what do some people do? They use mods (or cheats or hacks if you will), but they can do more than giving money, here's what a mod menu looks like (image taken from google) https://img.gta5-mods.com/q75/images/gta-5-pc-mod-ohmymodz-essential-v1-mod-menu-trainer-lua/f0f426-picgta5840x472.png
As you can see, it comes with many features like making everyone's lives a living hell filled with objects spawning all over, trapping you and lowering your FPS, and explosions killing you and ...you get the point. Needless to say, those things can also be used in a non harmful way, but that's completely left to the modder's judgement. So, what is my point in all this? Grinding is painful enough that some people opt for mods, and so the game is more or less rampant with modders, some of them are nice people who wants to have fun with you, some of them wants to ruin the game for everyone, some just want their money discreetly, etc.
It would definitely not get rid of the problem entirely, but imo, Rockstar is being a bit greedy with their grinding and trying to get us all to buy their overpriced Shark cards... If grinding wasn't so painful I'm sure we'd be seeing a lot less modders around, but this is just my take on it, thanks for reading it so far :D

I still recommend this game, grinding and cheating aside, this game is still amazing, the lack of in-game currency doesn't stop you from having fun.

Final verdict
9/10, would ride a bike into a tree branch killing my friend on the passenger's seat again.
